What’s New at Zamá

This summer, Zamá’s charismatic Mexican chef, José Alfredo Bazán Bello (or as everyone calls him, Bazán!) has more treats in store for you at Villa del Palmar Cancun. Adding some fresh touches to the extensive lunch menu for a more casual lunchtime experience at Zamá this summer, Bazán delivers some new options to share, as well as your Mexican favorites, all served beneath the gigantic palapa at the heart of the resort.

The fun, tasty dishes Bazán has planned for the lunch menu include fajitas with a twist, quesadillas just as you like them, barbecue chipotle chicken as well as enchiladas. Return guests to Villa del Palmar Cancun will be pleased to know that your favorite Zamá delicacies like the sizzling Seafood Soup, known as Chilpachole, or the Tikinxic Fish, a local recipe, and the “have to try” fish or shrimp tacos are still in pride of place on the Zamá menu.

Thanks to the new additions to the lunch selection at Zamá, you will enjoy the opportunity to try mole, a traditional Mexican sauce made from a multitude of ingredients including chocolate, nuts, seeds and chilies, all toasted, ground and cooked up into a delicious thick sauce. You will be able to try Bazán’s unbeatable mole recipe (which was passed down through generations in his family) when you order the enchiladas (chicken or vegetable) at Zamá. If the idea of a chocolate sauce and chicken is too adventurous for your taste buds, you can also order a tradition green chili sauce to accompany your enchilladas.
