Similar to the rise in popularity of savory dishes incorporating sweet ingredients such as chicken dishes which feature chocolate-based sauces and fruit being added to entree salads, the top pastry chefs in the world have recently begun experimenting with the pairing of unconventional ingredients to produce extraordinary, cutting-edge desserts.  “The idea is to play with ingredients that we normally associate with savory dishes, such as herbs and other condiments.

The dessert menu at Villa del Palmar Cancun’s Davino restaurant will allow you to indulge your craving for something sweet in a whole new way.  “To start we have the Davino Mousse, which blends basil with white chocolate, served with nutmeg ice-cream and brownie,” describes Chef Diego, “and then there is a delicious dessert where dates are served with a cream that is infused with punchy spices such as clove, cumin and cardamon.”

The use of herbs on the dessert menu doesn’t stop at basil; Chef Diego encourages diners to sample his divine rosemary creme brulee with pears cooked in red wine, as well as a thyme ice cream accompanying a fondant with hibiscus flower and ginger cream.  “Next, we will be thinking about a dessert with bacon!” promises the young Italian chef.Savory Desserts Delight the Palate at Davino
